muy delicioso

per request, here is my famous angelfood cake recipe. adapted slightly from betty crocker circa 1969

(i have made it so many times its pretty much committed to memory, although i open the book out of habit, and now i don't even have to look it up... its like the book says to me, here i am, your favorite goodness, make me, eat me, love me)

angel food deluxe (pg. 110)

1 cup cake flour
1 1/2 cup confectioners' sugar
12 egg whites(1 1/2 cups)
1 1/2 teaspoons cream of tartar
1/4 teaspoon salt
1 cup granulated sugar
1 1/2 teaspoons almond extract
1/2 teaspoon vanilla extract

heat oven to 375 degrees. stir together flour and first amount of sugar; set aside.

in large mixer bowl, beat egg whites, cream of tartar and salt until foamy. add second amount of sugar, 2 teaspoons at a time, beating on high speed until meringue holds stiff peaks. gently fold in flaovrings. sprinkle flour-sugar mixture 1/4 cup at a time over meringue, folding in gently just until flour-sugar mixture disappears. push batter into ungreas3ed tube pan, 10x4 inches. gently cut through batter.

bake 30 to 35 minutes or until top springs back when touched lightly with finger. invert tube pan on funnel; let hang until cake is completely cooled.

one could top this with pretty much everything, i love it with a little vanilla ice cream and fresh strawberries. enjoy!

oh my yumminess! Always looking for a good cake recipe. You know what would be great with this? Lemon curd (which is super easy to make) and berries. thanks for the recipe!
