new card & glorious cake

it was steph's birthday sunday and i made her a card with the new PAPERMINX KIT. (there are still four left if you want one!!) I've also been making atc's and i'm now hooked. i don't think i'm supposed to post those yet... so I'll hold out, but they're coming soon.

yeah, those little buggers are addicting! i hate my job. did i say i hated my job? yeah, why aren't there any fulltime scrapbooking positions open around here? huh?

oh well, i guess my hobby will stay a hobby. happy tuesday eve, all!

BEST CARROT CAKE RECIPE EVER!!!!

8 eggs
3 cups vegetable oil
7 cups grated carrots
4 cups flour
4 tsp. baking soda
4 tsp. cinnamon
4 cups sugar
pinch of salt

Combine all ingredients and bake in well-greased 12"x18" pan @ 350 degrees for one hour.

Let cool, then frost

Frosting (dudes, this is what makes the cake!!)
2 -8 ounce cream cheese blocks, softened
2 cubes butter softened
2 lbs powdered sugar
4 tsp. vanilla
(and i sprinkle in a little cinnamon in the frosting because i love how the flecks look against the white)

frost that bad boy and enjoy while not thinking about the loads of oil that makes it so gloriously moist.
